Caramel is a beige to dark-brown confectionery product made by heating any of a variety of sugar / carbohydrates like dextrose, invert sugar, lactose and malt sugar., either alone or in the presence of acids, alkalies, and/or salts. The acids that may be used are sulfuric, sulfurous, phosphoric, acetic, and citric acids; the alkalies are ammonium, sodium, potassium, and calcium hydroxides; and the salts are ammonium, sodium, and potassium carbonate, bicarbonate, phosphate (including mono- and dibasic), sulfate, and bisulfite. Antifoaming agents, such as polyglycerol esters of fatty acids, may be used as processing aids during manufacture.[5] Its color ranges from pale-yellow to amber to dark-brown.

It is used by soft drinks companies, pharmaceutical companies and bakeries as flavoring in puddings and desserts, as filling in bonbons and as a topping for ice cream and custard.

Cane sugar or sucrose is our main source of raw material in Nigeria. If invert sugar, dextrose, or glucose is heated alone, a material is formed that is used for flavoring purposes; but if heated in the presence of certain catalysts, the coloration is greatly heightened, and the darker brown products formed can be used to color many foodstuffs and beverages.

The market for in Nigeria caramel is national. With a population of over 165 million people and an estimated national population growth rate of 5.7% per annum ,an average economic growth rate of 3.5% per annum in the past five {5} years, Nigeria has a large market for caramel.

The demand is high but local supply low hence the need for importation in the past. Industry data suggest that Nigerian companies imported USD 308,370 worth of caramel from India alone with total quantity of 379,239.

Local production of caramel will thus help to conserve scare foreign exchange and create employment.
