EGUSI GRINDING AND PACKAGING IN NIGERIA; HOW VIABLE?

A condiment is something such as a sauce which is added to some foods to impart a particular flavor, enhance its flavor, or in some cultures, to complement the dish.

Egusi belongs to the family of water melons. They grow in gourds which are mainly cultivated for their seeds as the flesh is neither sweet nor edible. Egusi seeds are small and flat. One end of the seed is rounded while the other is tapered.

After harvest, the gourds are left to ferment; the fermented flesh is then washed off the seeds. The seeds are then dried and the light brown husks removed by hand or mechanically. When ready to be used in food recipes, the white/cream seeds are ground into powder and used as soup thickener.

Popular local seasoning in Nigeria includes Egusi, Ogbono ,Pepper, Crayfish, Ogiri, Dawadawa, Iru, and Okpeyi. Because of their make-up, local seasonings are considered highly proteinous and medicinal. They can be used singly to cook special variety of soups or combined with bouillons. For instance, among the Igbos, Ogiri is used to cook bitter leaf soup while Iru or Dawadawa is used in cooking egusi soup.

Besides the local seasonings, there are several brands of food seasonings readily available in the open market, in-street shops, and supermarkets. They include Maggi, Knorr, Royco, Doyin, Jumbo, Suppy which are in cubes; Onga, Mixpy, Benny-the powdered seasoning or the Monosodium Glutamates (MSGs): A-one, Vedan, Aji-no-moto, Sasa, and Tasty King.

In Nigeria, seasoning belongs to the food and beverage sub-sector of the consumer market, which is estimated to worth about N 14.7 trillion.

Indeed, seasoning is key to cooking in Nigeria as no cooking is complete without the addition of one form of season or the other.

Food condiments and seasonings are in high demand in Nigeria. Popular brands in Nigeria market include “Magi”, “Royco”, “Ajinomoto”, “Iru” or “Ogiri” (locust bean based), Curry, Thyme, etc.  It is estimated that the total national demand for various types of food condiments and seasonings in Nigeria is 5,475 Tonnes per annum.
