However, good results have been obtained for starch processing in Europe, South America and Asia when alternative starch sources are used including potatoes, wheat, barley, rice and cassava.
Glucose syrup production from cassava can be subdivided into the following process areas of liquefaction, saccharification, and purification.
Glucose syrup is a sweetener used industrially in Nigeria, for example in the food, soft drink and confectionery industries. The establishment of a process for conversion of cassava starch to glucose syrup would enhance the local capability of glucose syrup production.
The total sugar requirement for soft drink bottlers and juice manufacturers in Nigeria is estimated at 280,000 tons of sugar annually indicating a large for glucose syrup in Nigeria.
